  • 1 cup khoya (mawa), crumbled
  • 1/2 cup powdered sugar
  • 1/4 cup chopped mixed nuts (almonds, pistachios, cashews)
  • 2 tablespoons desiccated coconut
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron (optional)
  • Oil or ghee for deep frying

For Sealing:

  • 2 tablespoons all-purpose flour
  • 3 tablespoons water

Instructions For Gujiya Making:

For the Dough:

  1. In a large mixing bowl, combine the all-purpose flour and ghee.
  2. Rub the ghee into the flour until the mixture resembles breadcrumbs.
  3. Gradually add water and knead to form a smooth, firm dough.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.

For the Filling:

  1. Heat a non-stick pan on medium heat and add crumbled khoya to it.
  2. Cook khoya, stirring continuously, until it turns light golden brown and releases a nice aroma.
  3. Remove the pan from heat and let the khoya cool down completely.
  4. Once cooled, add powdered sugar, chopped nuts, desiccated coconut, cardamom powder, and saffron (if using). Mix well to combine.

For Gujiya Making:

  1. Divide the dough into small lemon-sized balls and roll each ball into a small circle (approximately 4-5 inches in diameter).
  2. Place a tablespoon of the prepared filling in the center of each circle.
  3. Moisten the edges of the circle with water and fold it over to form a semi-circle.
  4. Press the edges firmly to seal the gujiya. You can use a fork to crimp the edges for decoration.

For Sealing:

  1. In a small bowl, mix all-purpose flour and water to form a smooth paste.
  2. Use this paste to seal the edges of the gujiya to prevent the filling from spilling out during frying.

For Frying:

  1. Heat oil or ghee in a deep frying pan over medium heat.
  2. Once the oil is hot, carefully add the sealed gujiyas in batches and fry until they turn golden brown and crisp on all sides.
